About the Author

For over thirty years, Tom Anderson has lived in the farm that was built by his great-great-grandfather. After earning a degree in wildlife biology, he was the first Chisago County Parks director and worked as a naturalist for the Lee and Rose Warner Nature Center and the Science Museum of Minnesota. For fourteen years, he wrote an award-winning column called “Reading Signs” for the Chisago County Press newspaper. He also received a national award for “best feature” in a professional periodical from the National Interpretive Association. Tom’s first book was a collection of essays entitled Learning Nature by a County Road. It was followed by a book titled Black Bear: Seasons of the Wild. Tom is also the author of a series of regional books, Things That Bite: A Realistic Look at Critters That Scare People. He writes freelance articles for various magazines and Minneapolis’s Star Tribune newspaper, and he contributes content to Minnesota Public Radio.

Dandelion Taraxacum officinale Dandelion is one of the most recognized and attacked plants growing in your lawn. No plant has been so thoroughly marketed as a “weed.” Every spring we are told that the perfect lawn should be dandelion-free. Consequently, weed-killing businesses have grown rich. I am here to tell you that the much-maligned dandelion is a superfood! European immigrants intentionally introduced dandelions to North America in the mid-1600s. They planted it in their gardens for food and medicine. During World War II many Americans ate dandelions as a vegetable. After the war, herbicides perfected for warfare were repurposed for a chemical onslaught against dandelions. Habitat Dandelions thrive almost anywhere that humans go because we disturb the soil. Consequently, lawns, fields, roadsides, vacant lots and other human-made openings are common places to find dandelions. Identification Key Characteristics In early spring the rosette of leaves is easy to identify. Leaves are dark green, deeply notched and sharply toothed. The familiar disc of yellow is a common, fragrant spring flower. It blooms less profusely in the summer. When the flower goes to seed the delicate ball of fluff is equally familiar. With a puff of breeze, these seeds can be dispersed for miles. Foraging Tear the leaves from the plant. Young leaves and those growing in shade are less bitter. When collecting flowers, gather them when the bloom is at its peak. Roots are best collected from second year plants and should be dug up after September. This way the roots will be firm and have all the nutrients in them. Edible Parts Leaves: Fresh in salads, sandwiches, wraps or sautéed in olive oil. Flowers and Buds: Dandelion blossoms add edible color to a salad and are used to make wine. Flower stems: The stalks can be boiled up as a substitute for traditional spaghetti noodles. Taproot: The roots can be roasted for a dandelion coffee. Preparation Mixing dandelions with spinach or lettuce will add a peppery flavor to those blander greens while adding tons of nutrients. (Iceberg lettuce, the most popular, cheapest and nutrient poor of the lettuces has only 1/40th the bionutrients of dandelion greens!) To minimize bitterness, particularly when eating them raw in a salad, add balsamic vinegar, a little sugar or honey, or fats from butter, bacon grease or oils. A third way to reduce or eliminate the bitterness is to boil the greens for 3-5 minutes, change the water and boil a second time. Species Superlatives Compared to spinach, dandelion leaves have eight times more antioxidants, two times more calcium, three times more vitamin A, and five times more vitamin K and vitamin E. They are also a good source of Vitamin B6, thiamin, riboflavin, potassium, copper, magnesium and manganese. Adding dandelions to your diet can reduce the risk of cancer. They are high in Vitamin C and luteolin, which reduce free radicals (major cancer-causing agents) in the body.
